This Guinness chocolate mousse is light, fluffy, and delectably creamy for the best boozy dessert. Inspired by a recipe I fell in love with in Dublin, this 15-minute mousse recipe is the perfect way to impress your friends at your next dinner party.

What I love about this mousse is, the flavor is delicious, and the texture is light and fluffy just the way you want mousse to be.

I used to be intimidated by making mousse. I laugh now because it is so easy. I remember my first taste so many years ago when I workedat the Mexican restaurant.

They served a delicious chocolate mousse. I watched the cooksmake it once and they used a powdered mix. They just added liquids. I thought they used the powderbecause of how difficult moussewas to make, but now I know differently.

When we went to Ireland in September of 2015, we went to the Guinness Storehouse Brewery. Naturally. If you are ever in Dublin and want something to do, go there! It’s fascinating and you get a free beer.

The reason I bring this up is that while we were at the brewery, there was a collection of free recipe cards at various locations. Guess who took them all?

This recipe was one of theirs. So, I can’t take credit for it.

Helpful tips

  • Although I don’t add whipped cream on top of the mousse when I serve it, feel free to add a dollop on top. You can also shave some chocolate on top of the whipped cream for a touch of color.
  • I use 60% cocao Ghirardelli chips but you can use semisweet chocolate chips instead.
  • If you don’t have a double boiler, you can add an inch or two of water to a small saucepan, heat it on medium heat and place a glass bowl on top. Add the chocolate and butter and stir until melted. You can also use a microwave to melt the chocolate and butter.

How to make Guinness chocolate mousse

I cut the original recipe inhalf and it still makesthree good sized portions.Just double my measurements to double theservings.

Pre-step

Get out a stand mixer, hand beater, or electric mixer and a medium bowl. Also, get out 3 glasses or glass serving dishes.

Step one

Gather the ingredients: chocolate chips, butter, large eggs, superfine sugar, and the star of the show – Guinness beer.

Step two

Start by melting the chocolate with two tablespoons of butter. You can use a double boiler or the microwave if you don’t have one.

But what I do is take a small saucepan and place a few inches of water into it. Heat the wateron medium heat and place a glass bowl on top of the pan, making sure the bowl doesn’t touch the water. Place 3/4 cup of chocolate chips in the bowl along with the butter.

Step three

Stand there and stir with a rubber spatula to help it melt. Add 1 3/4 ounces of Guinness and stir it occasionally until it is completelymelted.

Step four

As the chocolate is melting, separate the eggs and put the yolks in a stand mixer.

Add sugar and whip the yolkson high until they are nice and creamy.

Step five

Mixthe whipped yolks in with the melted chocolate mixture.

Peaks o’ white

Step six

Clean the mixer container and add the egg whites and whip them on high until they form soft peaks.

Alternately, you can use a whisk if you prefer to whip the egg whites. I do find it satisfying to do it that way once in a while.

Step seven

Time to fold the whites into the chocolate mixture.

Woohoo. Bubbly and perfect.

Step eight

Divide the chocolate mousse evenly between three double old fashioned glasses.

Step nine

Cover the glasses with plastic wrap and place them in the refrigerator for at least two hours before serving them.

Ingredients

  • 5 eggs (separated)
  • 3/4 cup chocolate chips I used Ghirardelli 60% cocoa chips
  • 2 tablespoons butter
  • 1 3/4 ounces fine sugar
  • 1 3/4 ounces Guinness stout

Instructions

  • Melt chocolate and butter in a double boiler or microwave.

    3/4 cup chocolate chips, 2 tablespoons butter

  • Once it is melted, add Guinness and stir until incorporated.

    1 3/4 ounces Guinness stout

  • In a stand mixer, beat egg yolks with sugar until creamy.

    5 eggs, 1 3/4 ounces fine sugar

  • Mix the egg yolk mixture with the melted chocolate.

  • In a stand mixer, beat egg whites until they form stiff peaks.

    5 eggs

  • Fold egg whites in with the chocolate mixture.

  • Pour and divide the mousse between the 3 glass containers.

  • Cover with plastic wrap and place in the refrigerator for at least 2 hours.

  • Eat

  • Smile

I didn’t add the time you need to have it get cold in the fridge. Add 2 hours for that!
