With no milk or eggs, this Easy Date Loaf recipe is a great budget family recipe.

I have been making this Date Loaf recipe for years, using my Nan’s recipe that I found in a family cook book. It’s an incredibly simple recipe to make, all you need to do is melt the ingredients and then mix together and in no time at all, you will be enjoying a slice of this super soft and delicious Date Loaf!

Like all of my Nan’s recipes, this easy Date Loaf is definitely a budget recipe and you most likely already have everything you need to make it in your pantry and fridge. You can also use fresh Medjool Dates for this recipe if you prefer, however just make sure you remove the seeds before you try to chop them!

This loaf is a sweet treat for lunch boxes or you can just save it all for yourself and enjoy it slathered with butter for your morning tea.

  • This Date Loaf is best stored in an airtight container at room temperature. It can be kept for up to 5 days.
  • To freeze, wrap in foil or place into a freezer safe container.
  • You can also use medjool dates for this recipe, you will need to slice them in half and remove the seed before chopping.
  • If you are concerned the top of your loaf is browning too much, you can cover it with a piece of foil.

This easy Date Loaf recipe couldn't be easier to put together - and you likely have all of the ingredients you need to make it sitting in your fridge and pantry! Both regular and Thermomix instructions included.

Ingredients

  • 1 cup chopped pitted dates 200 grams
  • 1 cup boiling water 250 grams warm water if using a Thermomix
  • 60 grams butter cubed
  • 1 cup brown sugar 180 grams
  • 2 teaspoon vanilla extract
  • 1 & ¾ cups self raising flour 260 grams
  • 1 tsp bicarbonate of soda

Instructions

  • Preheat your oven to 180 degrees celsius (fan-forced) and line a loaf tin with baking paper.

  • Roughly chop your dates place into a large bowl.

  • Add the sugar and butter (which has been chopped into pieces) and carefully pour over the boiling water. Gently stir until the butter has metled.

  • Add the vanilla extract, self raising flour and bicarbonate of soda and mix well until just combined.

  • Pour the mixture into the prepared loaf tin and gently smooth the surface. Place into the oven and bake for 35 - 40 minutes or until a skewer comes out clean when instered into the middle.

  • Allow the Date Loaf to cool in the tin for 15 minutes before carefully removing and allowing to cool completely.

Thermomix Instructions

  • Preheat your oven to 180 degrees celsius (fan-forced) and line a loaf tin with baking paper.

  • Place the dates into your Thermomix bowl and mix for 4 seconds on speed 7 to roughly chop. If you would like your dates to be finer, mix for a further 3 seconds on speed 7.

  • Add the water (you can use hot water from the tap), brown sugar and butter and cook for 4 minutes, 70 degrees, speed 2.

  • Scrape down the sides of the Thermomix bowl and add the vanilla extract, self raising flour and bicarbonate of soda. Mix for 12 seconds, speed 5.

  • Scrape down the sides of the Thermomix bowl and mix for a further 5 seconds, speed 4 to combine.

  • Pour the mixture into the prepared loaf tin and gently smooth the surface. Place into the oven and bake for 35 - 40 minutes or until a skewer comes out clean when instered into the middle.

  • Allow the Date Loaf to cool in the tin for 15 minutes before carefully removing and allowing to cool completely.
