When you have a sweet tooth, it can be so hard to choose between desserts. These brookies are the answer to your dessert dilemma with their mouth watering combination of two of the best desserts ever. Treat yourself to this decadent treat and enjoy!

This isn’t our first time playing around with brownie flavors. Our Pecan Pie Brownies are one of our most popular recipes, followed by our S’mores Brownies, and our Brownies Chocolate Chip Cookie Dough Cake is always a favorite.

What Are Brookies?

Brookies are a delicious combination of two of my favorite desserts: chocolate chip cookies and brownies. The hybrid cookie-brownie is near dessert perfection. You can eat them using your hands or make them the base of a monster sundae.

And most importantly, they answer the question: do you want cookies or brownies? Both. You want both.

What You’ll Need

For the cookies

For the recipe, we’re making homemade chocolate chip cookies. You’ll need:

  • Butter – Go for salted butter but you can use unsalted butter if that’s what you have.
  • Sugar – You’ll need a combination of granulated sugar and packed brown sugar.
  • Eggs – Use large, room temperature eggs for the recipe.
  • Vanilla extract – Go for pure vanilla extract instead of imitation for best flavor.
  • All-purpose flour – A basic all purpose flour is all you need.
  • Baking soda – Baking soda helps the cookies rise a little.
  • Chocolate Chips – Use your favorite chocolate chips for the recipe – semisweet work great, as do milk chocolate, dark chocolate, chunks, and minis. You could even mix two more more different types if you like.

For the brownie batter

I short-cut the brownie batter a bit for this and use a family sized brownie box mix. You will need:

  • Family-sized brownie mix – you can use a brownie mix you have on hand or pick your favorite variety of brownie mix. There really is no wrong answer and there are a lot of varieties of brownies to choose from so you can be creative. The important part is to make sure that the brownie mix you buy has instructions for making them in a 13×9 inch pan.
  • Extra ingredients to make the batter – To make the batter, you’ll need additional ingredients like water, oil and eggs. Check the back of the box to see what is required for the brownie mix you purchase.

My Favorite Brownie Pan!

You can use any 13 x 9 inch baking pan to make your brookies but this brownie pan is my favorite thing because it has these awesome dividers you slide in before baking so that you have perfectly sliced brownies when you’re done.

How to Make It

Make the cookie dough. To start, place the softened butter, granulated sugar, and brown sugar in a large mixing bowl. Mix the butter and sugar until it becomes creamy and then add the eggs and mix until incorporated.

In a separate bowl, combine the flour and baking soda using a whisk. Slowly add the flour mixture into the wet ingredients while mixing at medium speed. When the flour is fully mixed in, stop the mixer.

Pour the chocolate chips in and fold them into the batter using a spatula. Set the cookie dough aside while you prepare the brownie batter.

Note: This makes about 40 ounces of cookie dough. You only need 20 ounces for the brookies. Take the remaining 20 ounces of cookie dough, tightly wrap it in plastic wrap and then place it in a freezer bag and store in the freezer for up to 2 months.

Make the brownie batter. Once the cookie dough is made, preheat the oven to 350 degrees F. Gather the ingredients for the brownies.

Follow the instructions on the brownie’s box. Typically you need a medium or large bowl. You don’t usually need a mixer for brownie batter because it is a looser consistency, but if it makes it easier for you, then you may need to clean off your mixer before continuing.

Combine and bake. Grease a 13”x9” brownie pan making sure to get the corners and edges to help prevent sticking. Pour the prepared brownie batter into the pan and use a spatula to smooth it out.

Use a tablespoon to drop dollops of the cookie dough all around the pan on top of the brownie batter. Then take a knife and run it through the brownie batter around the cookie dough helping it meld with the cookie dough.

Depending on your oven, you’ll need to bake the brookies for 35 to 40 minutes or until a toothpick stuck in the middle of the pan comes out clean. Allow the bookies to cool for about 20 minutes before slicing and serving. Trying to serve them too soon can create a bit of a mess since they need some time to set once they come out of the oven.

Ingredients

Cookie Dough

  • 1 cup Salted butter, softened
  • 3/4 cup Granulated sugar
  • 3/4 cup Packed brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 1/4 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 2 cups Chocolate Chips

Brownie Batter:

  • 1 box Family-Size Brownie mix + ingredients listed on back of box

Instructions

Cookie Dough:

  • Place softened butter in the bowl of your mixer followed by the granulated sugar and brown sugar. Mix together on medium speed until creamy.

  • Add 2 eggs and vanilla and continue mixing until the eggs are fully incorporated.

  • In a medium bowl combine all-purpose flour and baking soda, whisking together so it is well mixed.

  • Add the flour mixture to the mixing bowl and mix on medium until all of the flour is mixed in.

  • Sprinkle in the chocolate chips and use a spatula to fold them into the dough.

Brownie Batter:

  • Mix brownie batter according to instructions on the back of the box.

Brookies:

  • Preheat oven to 350 degrees F.

  • Prepare a 13”x9” baking pan by greasing it with non-stick spray.

  • Pour brownie batter into the pan and use a spatula to smooth it out.

  • Using 20 ounces of the chocolate chip cookie dough, place 1 tablespoon dollops of cookie dough all over the brownie batter. Then take a knife and run it through the brownie batter around the cookie dough helping it meld with the cookie dough.

  • Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

  • Let cool for 20 minutes and then serve.

Notes
